These jumbo seared scallops were incroyable! Swimming in a flavorful Provencal sauce of tomatoes, leeks, garlic, a pinch of cayenne pepper and the sweetness of grated orange peel, I also added a touch of white wine and a little bit of herbes de provence right into the sauce as well. Rustic and truly exceptional in taste, this sauce would also work very well with halibut or even a seared tuna steak.
