This decadent vinaigrette will have you swooning. A delightful combination of crunchy, buttery walnuts, tangy red onion, fresh cucumbers and creamy Gorgonzola cheese is the perfect topping for a wedge of iceberg lettuce, or even just on your faovrite whole grain cracker as a snack. Tossed together with a touch of olive oil and white wine vinegar, the flavors meld together beautifully. (Yum!)

Blue Cheese, Walnut & Cucumber Vinaigrette
Ingredients:
- For the vinaigrette:
- 1/2 cucumber, cut into half moons
- 2 Tablespoons diced red onion
- 1/4 cup walnut pieces
- 1/4 cup Gorgonzola cheese, crumbled
- 3 Tablespoons white wine vinegar
- 1/4 cup olive oil
- salt and pepper to taste
Directions:
- Combine the ingredients together in a small mixing bowl. Stir every once and a while, but let sit for at least 30 minutes before serving.
