Grab a bag of watercress the next time you see these tender greens in the store. Peppery in flavor like baby arugula, watercress is a softer green that is packed with flavor and nutrients. Lovely in simple salads like this one, in a bowl of soup, or on a sandwich, watercress is one of my favorite greens to work with. Here I have paired the peppery greens with slices of crisp, sweet persimmons, salty roasted pistachios and a light homemade vinaigrette. Sweet, salty and tart from the lemon dressing, this elegant salad is a nice accompaniment to any entrée you create.

Peppery Watercress with Persimmons, Pistachios & Lemon Vinaigrette
Ingredients:
- 4 cups watercress
- 2 persimmons, cored and sliced
- 1/4 cup roasted, salted pistachios (shelled)
- For the vinaigrette:
- zest of 1 large lemon
- 1 teaspoon honey
- pinch of crushed red pepper flakes
- salt and pepper to taste
- juice of 1 lemon
- 1/4 cup extra virgin olive oil
Directions:
- Toss the greens with the sliced persimmons and pistachios. Whisk the vinaigrette ingredients together until emulsified; adjust seasonings if necessary. Drizzle over the salad and serve at room temperature.
