This recipe for a Middle Eastern-inspired meatloaf might actually be the best meatloaf I have tasted to date. No joke–this ground sirloin meatloaf is flavored with fragrant spices including ground cumin, coriander, allspice, cinnamon, and red pepper, and also includes fresh parsley and fresh cilantro. Filled with cooked bulgur sort of like a traditional Middle Eastern kofta, this meatloaf is cooked and then glazed with a slightly tart, slightly sweet glaze of pomegranate molasses and a touch of honey. Fabulous and unique, this recipe is just the tip of the ‘whole grain’ iceberg in this highly recommended cookbook.
