The highlighted recipes for the next couple of days come from one of my new favorite cookbooks. A Bon Appetit publication entitled The Food Lover’s Cleanse, this outstanding cookbook features seasonal, flavorful and modern recipes for food lovers everywhere. These recipes show that healthy food can be decadent in its own right with the use of a lot of fresh, seasonal produce and healthy proteins–all with a modern spin.
Today’s recipe was simple and outstandingly flavorful. Bone-in, skin on chicken breasts are seasoned with the warm taste of Chinese five spice powder and seared along with quartered shallots until caramelized. Red grapes and fresh thyme are then added into the pan, along with a touch of white wine vinegar before being put in a high heat oven. The grapes and the chicken pair beautifully together and both become perfectly roasted in the oven.
