Provençal-Baked Chicken Legs with Potatoes & Onions

Chicken legs are not only an economical choice at the supermarket, but a tasty one at that.  This simple recipe takes chicken legs dusted with herbes de Provence and a sprinkling of salt and pepper, and bakes them along with sliced red onions, sliced red potatoes and a few lemon slices for an added burst of fresh flavor.  Served alongside a simple green salad with olives, this baked chicken dish is filled with the flavors of the south of France.

Provençal-Baked Chicken Legs with Potatoes & Onions

Ingredients:

  • 3 chicken legs
  • Olive oil
  • Salt and pepper
  • Herbes de Provence
  • 2 lemons, sliced into ½-inch slices
  • 4 red potatoes, sliced into ½-inch slices
  • ½ red onion, sliced

Directions:

  1. Preheat the oven to 375 degrees. Line a roasting pan or deep baking dish with parchment paper. Arrange the sliced onions, potatoes and lemons in the pan. Place the chicken legs on top of the sliced veggies; season the chicken thighs with salt and pepper. Season each leg with 1/4 teaspoon of herbes de Provence; drizzle the entire dish with a couple Tablespoons of oil.
  2. Bake in the preheated oven for 1 hour to 1 hour and 10 minutes, or until the chicken is cooked to 165 degrees.
