Never underestimate the power of store-bought spreads and tapenades! Not only are they a great item to keep in the pantry for a quick appetizer idea with your favorite flat-bread or cracker, but they are a simple and flavorful way to liven up your favorite proteins as well. Here I have spread a tangy olive-artichoke heart tapenade on my favorite protein, salmon filets. Baked until perfectly flaky, this simple dinner idea might be easy to assemble, but it is a very impressive dish to serve at even the most special of dinners.

Baked Salmon with Olive-Artichoke Tapenade
Ingredients:
- 2 (7-oz.) salmon filets
- salt and pepper (to taste)
- Store-bought olive-artichoke tapenade (or your favorite tapenade flavor!)
Directions:
- Preheat the oven to 400 degrees. Line a small baking sheet with parchment or foil. Place the salmon filets on the prepared baking sheet; season with a pinch of salt and pepper and top with some of the tapenade. Bake for 15-18 minutes or so, until the fish is perfectly flaky.
