This simple yet flavorful one-pot entree if filled with Italian flavors. Fire roasted tomatoes, dry white wine, fresh thyme, crispy pancetta, artichoke hearts and buttery green olives make up the sauce and for the protein, a fillet of your favorite fish. I used salmon fillets, but a flaky cod or halibut fillet would also be lovely. Buon appetito!
