Roasted Haricots Verts & Figs with Caramelized Onions

Fresh fig season brings a big smile to my face!  Lovely to slice and eat on their own, to add into a warm bowl of oatmeal, to serve with honey and blue cheese with your favorite red wine, to make into preserves, to serve over vanilla ice cream…the list goes on and on…

For this savory dish I roasted quartered Black Mission figs with thin French green beans and a sprinkling of fresh thyme, and served them on a platter of sweet caramelized yellow onions.  An elegant side dish that pairs beautifully with just about any roast meat or fish I can think of.

Roasted Haricots Verts & Figs with Caramelized Onions

Ingredients:

  • 2 large yellow onions, sliced
  • 2 Tablespoons unsalted butter
  • Salt and pepper
  • 6-8 oz. haricots verts
  • 8-10 fresh figs, quartered
  • 1 teaspoon fresh thyme leaves
  • Extra virgin olive oil

Directions:

  1. Preheat the oven to 400 degrees. Line a baking sheet with foil or parchment paper.
  2. In a large skillet melt the 2 tablespoons of butter over low heat. Add in the sliced yellow onions and season with ½ teaspoon salt and a big grinding of pepper. Sauté over low heat for 20-25 minutes, or until tender and lightly caramelized.
  3. In the meantime, place the green beans and quartered figs on the prepared baking sheet. Drizzle with 1 Tablespoon oil, ½ teaspoon salt and ¼ teaspoon pepper. Sprinkle the thyme over everything as well. Roast for 15-18 minutes or until the green beans are lightly browned.
  4. Serve the warm green beans and figs over the caramelized onions.
