Fresh dill and lemon are perfect flavorings for rich, flaky salmon. For this grilled salmon recipe, I decided to make a no-cook vinaigrette of sliced shallots, lemon juice, a touch of heavy cream and fresh dill. Drizzled over the cooked salmon and served with lemon slices, this simple salmon dish pairs perfectly with a rice pilaf, garlic bread and roasted broccoli.

Grilled Salmon with Lemon-Dill Vinaigrette
Ingredients:
- (2) 6-7 oz. salmon filets
- 1 lemon, thinly sliced
- For the vinaigrette:
- 1 shallot, sliced
- Juice of 1 lemon
- 2 Tablespoons extra virgin olive oil
- 1 Tablespoon chopped fresh dill
- Salt and pepper to taste
- 1 Teaspoon heavy cream
Directions:
- Heat a grill pan over medium-high heat that has been sprayed with olive oil cooking spray. Season the salmon filets with salt and pepper. Grill, turning once, for 3-4 minutes per side, or until cooked to your liking.
- Combine all of the vinaigrette ingredients together in a small bowl. Serve poured over the salmon. Serve the salmon over fresh dill and lemon slices, if desired.
