I adore this appetizer for a few reasons: 1) its simplicity, and 2) the contrast of the cooling cucumber slices with the rich heat of the chipotle cream. It’s easy, just top slices of cucumber with a mixture of tangy sour cream mixed with a bit of chopped chipotle chiles in adobo sauce. These small bites do pack some heat, so don’t forget to have a cool cocktail on hand as well!

Creamy Chipotle Spread on Cucumber Rounds
Ingredients:
- 1 cucumber, cut into 1/2-inch rounds
- 1/2 cup sour cream
- 1 Tablespoon finely chopped chipotle chiles in adobo sauce (you can adjust this amount depending on the heat level you enjoy!)
