This recipe actually hails from the California Walnut commission. A unique, brightly colored side dish that is also super healthy and let’s not forget, unforgettably tasty. Roasted carrots glazed with a reduction of pomegranate juice and tossed with fresh thyme, buttery walnuts and dried cranberries for an extra pop of sweetness. I garnished the dish with a few micro greens as well for an added pop of green freshness.
