Don’t you just love your crock pot? I know I do, especially on days where we are super busy but still crave a home cooked meal. This Moroccan-inspired chicken dish is super flavorful and will be perfectly cooked in anywhere from 4-8 hours. Tender chicken thighs flavored with garlic, cinnamon and ground cumin cooked alongside sweet carrots—all served with sliced almonds, cilantro and golden raisins for that sweet addition the dish naturally craves. Serve with cous cous or yellow rice and some lemony broccolini for a nutritious (and easy!) weeknight dinner.
