Who doesn’t love a Caesar salad? A creamy dressing flavored with Parmesan cheese and that perfectly salty bite from a touch of anchovy paste and garlic, emulsified with the yolk of an egg and fruity olive oil. With a squirt of lemon juice and a grinding of black pepper, this dressing is wonderful on its own with some crudité to dip, or on a plate of leafy greens. I loved this creative idea for a traditional Caesar salad—one of the best homemade Caesar dressings I’ve ever come across, the base of this salad screams springtime: thinly sliced asparagus and tender baby kale leaves! Flavorful, healthy and not to be passed up.
