Sometime the simplest route is the best. Take this simple dish for example; my Roquefort & Walnut Toasts with Honey Drizzle are just that. Thick slices of the best whole wheat bread topped with crumbled blue cheese, buttery walnuts, a sprig of fresh thyme and a cracking of black pepper. Toasted until the cheese is warm and melted, the last addition is sweet, local honey drizzled on top of it all. Perfect with a simple salad for dinner, or as a rustic appetizer idea.

Roquefort & Walnut Toasts with Honey Drizzle
Ingredients:
- Whole wheat bread, sliced into (2) 1-inch pieces
- ½ cup crumbled blue cheese
- ¼ cup walnut pieces
- 2 sprigs of fresh thyme
- Black pepper
- Honey for drizzling
Directions:
- Preheat the oven to 375 degrees. Place the sliced bread on a baking sheet; top with the cheese, walnuts and thyme. Bake for 5-7 minutes, checking often, or until the cheese is melted and bread lightly browned. Top the breads with black pepper and a drizzle of honey before serving warm.
