Vanilla Ice Cream with Candied Pecans & Espresso Caramel
Ingredients:
- Vanilla ice cream
- Pecan candy (store bought or homemade)
- For the espresso caramel:
- ¼ cup dark brown sugar
- ½ cup heavy whipping cream
- Pinch of salt
- 2 Tablespoons unsalted butter
- 1 Tablespoon instant espresso powder
Directions:
- Scoop the ice cream into dessert dishes and top with pecan candy and some of the espresso caramel.
- To make the caramel, place the sugar, cream, salt and butter in a medium saucepan. Bring to a simmer over medium heat, whisking constantly. Cook for 3 minutes, or until the butter is melted and the sauce starts to become thicker. Whisk in the espresso powder and cook for an additional minute, or until the sauce is amber in color. Serve over the ice cream with the candied pecans.
