This tasty salad is filled with some of my favorite ingredients: Swiss chard, goat cheese, walnuts, chickpeas, and the sweet taste of apricots. The simple apricot vinaigrette is a flavored with both apricot preserves and mustard but if you have dried apricots in the pantry, I recommend slicing a few of those as an extra tid-bit of sweet flavor. If you have never used Swiss chard raw in a salad, this should be your test recipe—it is superbly fresh and unforgettably delicious!
