I love the mild flavor of poblano peppers, and when you roast them they develop a lovely smokiness as well. This fresh salsa recipe, courtesy of Bon Appetit magazine, is filled with fresh flavors and works very well over a grilled salmon filet. A unique mixture of roasted poblano peppers, briny capers, sliced lemons, olive oil and cumin seeds, I can see this being a lovely topping for not just salmon, but any of your favorite fish or even a grilled chicken breast.
