I love the combination of flavors and textures in this elegant appetizer, not to mention its unique appearance: sweet dates wrapped in salty slices of prosciutto, on top of a creamy mound of herbed goat cheese, and a decorative addition of tart reduction of balsamic vinegar. For a bit of color and fresh taste, a small sprig of thyme is added to the top of each tasty bite. A quick and easy small plate that would also work very well with fresh or dried mission figs.

Prosciutto-Wrapped Dates with Goat Cheese & Thyme
Ingredients:
- Dates (watch out for the pits!)
- Thin slices of prosciutto
- Herbed goat cheese, room temperature
- Fresh thyme
- Balsamic glaze (this is available on the oil & vinegar aisle of most grocery stores)
Directions:
- Wrap the dates with the prosciutto and place on top of a round of herbed goat cheese. Decorate each date with a sprig of fresh thyme, and drizzle some of the balsamic glaze either on the plate, or on top of each wrapped date.
