‘Lamb & Butternut Squash Stew’

What makes a stew different from a soup?  Good question.  A stew is usually heartier than a soup and contains less overall liquid than a soup.  Take this ‘Lamb and Butternut Squash Stew’ as an example: it only calls for 1 cup of beef broth to 1 pound of ground meat, cubes of butternut squash and 3 cups of kale.  This high ingredient to broth ratio ensures that each bite of this hearty cold weather stew is chock full of good-for-you ingredients.  I served this lovely stew over egg noodles, but brown rice or even cous cous would be just as tasty.
