The art of making soup is one of the first skills to master in the kitchen. Once you get the technique down pat, you can make a flavorful soup from just about any of your favorite ingredients. One of my new favorite flavor combinations is that of celery, a potato, and fresh dill. This simple recipe from Bon Appetit magazine is as easy to eat as it is to prepare; simple sauté sliced onions, celery, and a potato in butter and then add stock–simmer the mixture until tender, season, puree with an immersion blender, and enrich with a touch of heavy cream. A lovely pale green soup that will impress any dinner guest.
