Egg in Avocado Hole

Another lovely recipe courtesy of my dear friend Helen in Houston, Texas.  A simple breakfast dish that is as unique as it is scrumptious.  Simply halve an avocado, break an egg in each half, season, and bake until the egg is cooked to your liking.  To gild the lily, I sprinkled each cooked Egg in Avocado Hole with cooked turkey bacon, and served it alongside a crispy piece of toast and a roasted tomato slice.  (If, like me, you are a fan of the Tex-Mex breakfast dish huevos rancheros, this would be a lovely base for that recipe.  Simply make the recipe as stated and serve with a fresh salsa, black beans and perhaps a sprinkling of queso fresco.  Oh, and a dash of hot sauce of course.)

Egg in Avocado Hole

Ingredients:

  • 2 eggs
  • 1 avocado, halved and pitted
  • Cooked turkey bacon, optional
  • Salt & pepper to taste

Directions:

  1. Place an oven-safe pan in the oven then heat to 425 degrees.
  2. Cut a ripe avocado in half. Take the pan out of the oven (with an oven mitt!) and place the halved avocado in the pan. Break an egg in the holes of the avocado halves. (You will have white run off.)
  3. Season the eggs with salt and pepper and bake in the preheated oven until the egg is done to your liking.
  4. Sprinkle with cooked turkey bacon if you like before serving.

      Thanks Phillip! It was very unique and quite tasty…would like to try it again with a bit of salsa and maybe black beans in addition. 😉
