‘Cherry Almond Ricotta Drop Scones’

 With one bite of these delectable homemade scones, you will think you’ve been invited to the fanciest of high teas.  Simple to make but impressive enough for weekend company, these perfectly sweet scones are filled with dried cherries, buttery almonds, buttermilk and a citrus-flavored ricotta cheese.  You begin by plumping the cherries in warmed orange juice for added flavor; to continue the orange-theme, you then make a ricotta mixture with brown sugar and orange zest.  Part of the ricotta mixture is used in the batter, the other part is whipped and served on the side of each scone for a flavorful alternative to butter or cream.  You will love the texture of the scones which comes from a hearty mixture of all-purpose flour and whole-grain pastry flour.
