 This quick-and-easy seared scallop dish is full of bright, flavorful ingredients.  Tender, sweet scallops seared to perfection and served on a bed of crispy sugar snap peas, salty pancetta and caramelized shallots. Finished off with a squeeze of fresh lemon juice, this lovely entrée is quick enough for any night of the week, but elegant enough for weekend company.
