‘Minty-Spinach Dip’

 This healthy version of the classic is chock full of good-for-you ingredients.  We all love a restaurant-style cheesy spinach dip served with crisp, salty tortilla chips, but once you realize you can make an even better version in your own kitchen, that homemade version tastes just that much better.  I liked this version of a ‘Minty Spinach Dip’ for one, because it is just another excuse to use some of the lovely fresh mint from the garden, and two, because it packs in a serving of fresh spinach and a lovely array of crudités.  Simply wilted spinach, sliced scallions, fresh mint and seasonings mixed with either low-fat sour cream or protein-packed Greek yogurt.  For a bit of crunch, I love to serve a few baked whole-grain pita chips with this tasty appetizer as well.
