Salami & Brie Sandwiches with Arugula
Ingredients:
- 4 slices of whole grain bread
- Dijon mustard
- Peppered hard salami, cut into ¼-inch rounds
- Brie cheese, cut into slices
- Baby arugula
- Red wine vinegar
Directions:
- Preheat the oven to 425 degrees. Spread Dijon mustard on 1 slice of bread for each sandwich. Top that bread slice with the salami rounds.
- Place the sliced Brie on the un-coated bread slice for each sandwich. Heat all of the bread slices in the preheated oven for 5 minutes or until the Brie begins to melt and the bread is toasted. Garnish each sandwich with baby arugula and a drizzle of red wine vinegar before serving warm.
