Tomato-Tarragon Crostini with Whipped Feta

 This simple summertime appetizer is the perfect combination of creamy, crunchy, and fresh.  Crisp crostini topped with a creamy mixture of whipped feta cheese and cream cheese, topped with quartered cherry tomatoes, flavored with fresh tarragon and a hint of red wine vinegar.  A simple way to highlight the wonder that is the perfect tomato!

Tomato-Tarragon Crostini with Whipped Feta

Ingredients:

  • French baguette, cut into ½-inch slices
  • Extra virgin olive oil
  • Salt & Pepper
  • 2 parts feta cheese, crumbled & 1 part reduced fat cream cheese, room temperature
  • 1 pint cherry tomatoes, preferably heirloom and assorted colors
  • 2 Tablespoons fresh tarragon, chiffonade
  • 1 Tablespoon red wine vinegar
  • Pinch of crushed red pepper flakes

Directions:

  1. Preheat the oven to 400 degrees. Place the rounds of bread on a baking sheet. Drizzle each with a touch of olive oil. Bake for 5 minutes or until just crisp.
  2. Place the feta cheese and room temperature cream cheese in a mixing bowl. Beat, with a hand mixer, until well combined; this will only take about 1 minute.
  3. Allow the crostini to cool and then spread the whipped feta on each. In another mixing bowl toss the quartered tomatoes with the tarragon, red wine vinegar, crushed red pepper, and a pinch of both salt and pepper. (The feta cheese is already naturally salty, so just a pinch of salt will do here!) Serve room temperature.
