Broccolini with Black Olives & Feta

 My Broccolini with Black Olives & Feta is a simple side dish bursting with Mediterranean flavors.  Tender broccolini cooked until tender and garnished with creamy feta cheese and briny kalamata olives—fresh and delectable, this easy side dish is sure to become one of your favorites.

Broccolini with Black Olives & Feta

Ingredients:

  • 1 Tablespoon extra virgin olive oil
  • 2 heads of broccolini, ends trimmed
  • ¼ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • ½ cup lower sodium chicken or vegetable broth
  • Crumbled feta cheese
  • Black olives, preferably kalamata

Directions:

  1. In a large sauté pan, heat the oil over medium-high heat. Add in the broccolini and season with salt and pepper. Sauté for 3 minutes, add in the broth, and reduce the heat to medium. Cook for an additional 2-3 minutes, or until the broccolini is tender.
  2. Serve with a topping of crumbled feta cheese and the briny olives.
