 This utterly delectable summertime menu is easy to put together and full of flavor.   Whether these ‘Zucchini Melts with Tomato-Hazelnut Salad’ are served for a tasty lunch or light, vegetarian dinner, you and your fellow diners will be grinning with joy.  Briny olive tapenade spread on a slice of whole grain bread and then covered with creamy, melted Fontina cheese.  Finished off with tender zucchini and a simple side salad of ripe tomato slices, crunchy filberts, and sweet basil.  I can’t think of better menu to showcase the season’s best produce!
