 This unforgettable springtime dinner is perfect when paired with a refreshing glass of your favorite Sauvignon Blanc.  Flavorful salmon filets atop a mound of tender spring peas lightly mashed and mixed with a touch of butter and cream, all finished off with the lovely anise-flavor of fresh tarragon in melted butter.  A brightly flavored and well-balanced entrée on its own, but one made even more delectable with a side of toasted whole grain bread with a drizzle of fruity olive oil.
