I did a double-take when I saw a mound of lovely red-skinned plums at the grocery store the other day. I just couldn’t pass up buying a few and creating a colorful salad with these culinary gems. No joke, this was one of the best salads I have ever had—bursting with the fresh flavors of peppery arugula, sweet plums, tender, thinly sliced prosciutto and creamy goat cheese, all this salad needed now was a bit of crunch. A few buttery walnuts later, it was time to think about a simple vinaigrette. I thought the addition of a tart balsamic vinaigrette flavored with a touch of honey would do the trick; and it did. I guarantee that this unique salad will move to the top of your culinary to-do list with one single bite!

Arugula Salad with Plums, Prosciutto & Goat Cheese
Ingredients:
- 4 cups of arugula
- 2 plums
- ½ cup walnut pieces
- 4 oz. goat cheese, crumbled
- 4 thin slices of prosciutto
- For the vinaigrette:
- 2 Tablespoons balsamic vinaigrette
- ¼ cup olive oil
- Pinch of salt and pepper
- Pinch of crushed red pepper
- ½ teaspoon honey
Directions:
- Divide the arugula, plum slices, walnuts, goat cheese and torn slices of prosciutto amongst 4 salad plates. To make the vinaigrette whisk its ingredients together in a small bowl until emulsified. Drizzle the vinaigrette over the salads before serving.
