Arugula Salad with Plums, Prosciutto & Goat Cheese

 I did a double-take when I saw a mound of lovely red-skinned plums at the grocery store the other day.  I just couldn’t pass up buying a few and creating a colorful salad with these culinary gems.  No joke, this was one of the best salads I have ever had—bursting with the fresh flavors of peppery arugula, sweet plums, tender, thinly sliced prosciutto and creamy goat cheese, all this salad needed now was a bit of crunch.  A few buttery walnuts later, it was time to think about a simple vinaigrette.  I thought the addition of a tart balsamic vinaigrette flavored with a touch of honey would do the trick; and it did.  I guarantee that this unique salad will move to the top of your culinary to-do list with one single bite!

Arugula Salad with Plums, Prosciutto & Goat Cheese

Ingredients:

  • 4 cups of arugula
  • 2 plums
  • ½ cup walnut pieces
  • 4 oz. goat cheese, crumbled
  • 4 thin slices of prosciutto
  • For the vinaigrette:
  • 2 Tablespoons balsamic vinaigrette
  • ¼ cup olive oil
  • Pinch of salt and pepper
  • Pinch of crushed red pepper
  • ½ teaspoon honey

Directions:

  1. Divide the arugula, plum slices, walnuts, goat cheese and torn slices of prosciutto amongst 4 salad plates. To make the vinaigrette whisk its ingredients together in a small bowl until emulsified. Drizzle the vinaigrette over the salads before serving.
