I have never met a homemade hummus that I didn’t love–tender chickpeas, lemon juice, garlic, sesame paste and olive oil, mixed together into a smooth puree and served with pita chips, your favorite crackers, or a mixture of fresh vegetables for dipping. This version of hummus is made even creamier with the addition of a ripe avocado and is wonderful when served with not only fresh vegetables, but tortilla chips as well. A bowl of this tasty hummus is a healthy and delicious snack that your whole family won’t be able to resist!

Avocado Hummus
Ingredients:
- 1 (14.5-oz.) can of chickpeas, drained and rinsed
- 2 Tablespoons of tahini (sesame paste—available on the Ethnic Foods aisle of your grocery store)
- Juice of 1 lemon
- 1 garlic clove, peeled
- ½ teaspoon salt
- ¼ teaspoon freshly ground black pepper
- ¼ cup extra virgin olive oil, plus more for drizzling
- The flesh of 1 ripe avocado
- Pita bread, pita chips, fresh vegetables or tortilla chips for serving
Directions:
- Place the first 8 ingredients in the bowl of a food processor. Process until smooth and creamy. Place in your serving bowl and serve with a drizzle of olive oil on the top of the hummus. Serve with your choice of chips, veggies or crackers.
