Orange-Glazed Carrots

 What a simple way to add a bit of pizazz to a bag of baby carrots. My Orange-Glazed Carrots is a simple and utterly delectable way to enjoy those small orange gems we all know and love.  Tender carrots cooked in a mixture of orange juice and the reduction thickened with a bit of butter and sugar, this side dish is a wonderful pairing of simple ingredients that really work wonders on your taste buds.

Orange-Glazed Carrots

Ingredients:

  • 1 lb. baby carrots
  • ½ cup orange juice
  • 2 Tablespoons unsalted butter
  • 1 Tablespoon granulated sugar
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • Fresh chives, snipped for garnish

Directions:

  1. Place the carrots in a large saucepan and cover with water. Place on the stove, bring to a simmer and cook for 5-7 minutes, or until the carrots are tender. Drain and set aside.
  2. In a large sauté pan, place the cooked carrots and the orange juice. Cook over medium heat for an additional 5 minutes.
  3. Then, add in the butter, sugar, salt and pepper; cook an additional 3 minutes or until the sugar is dissolved and the butter melted. At this point, the orange glaze will have formed and it will be slightly thickened.
  4. Serve the carrots, with their juices, with a snipping of fresh chives.
