As I walked through the grocery store yesterday I could not pass up the gorgeous bunches of red kale staring me in the face. Leafy, red-stemmed stalks of greens that are the base of this nutritious and hearty side salad. Bite-sized pieces of raw kale tossed with a simple vinaigrette, buttery walnuts and salty Parmesan cheese. A lovely late summer salad that could easily be transformed into a main course salad with the addition of grilled chicken or perhaps a filet of tender salmon.

Red Kale Salad with Walnuts & Shaved Parmesan Cheese
Ingredients:
- 1 bunch of kale, washed, trimmed and cut into bite sized pieces
- 1 cup of walnuts, roughly chopped
- ½ cup shaved Parmesan cheese
- For the vinaigrette:
- 3 Tablespoons unseasoned rice vinegar
- ¼ cup extra virgin olive oil
- Salt and pepper to taste
Directions:
- Arrange the kale on your salad plates. Sprinkle with the walnut pieces and shaved Parmesan cheese. Whisk the vinaigrette ingredients together in small bowl and dress each salad.
