The depth of flavor in this tantalizing beef stew comes from marinating the stew meat overnight in red wine, and also, the addition of 1 oz. of chocolate right into the stew. A similar idea to a traditional Cincinnati chili or mole sauce, the chocolate doesn’t make this savory stew sweet in any way, it just adds another layer of richness. Made with potatoes, carrots, onions, and beef stew, you can make this slow-cooked stew either stove-top or in the slow-cooker for a more hands-off approach. I served this lovely stew right from the crock pot with pearled barley mixed with wilted baby arugula leaves.
