One of my new favorite ingredients to cook with is black garlic. With its earthy, fig-like taste, each clove of black garlic is packed with flavor and possibilities. Don’t be frightened when you see a head of black garlic—it is rather unique in its appearance in that not only the cloves are black in color and soft, but the entire skin of the garlic head is black as well! How is black garlic made you might ask? It is actually just garlic cloves that are slowly caramelized in low heat over an extended period of time. First used in Asian cooking, these delicacies can be added into a baked dish like this lovely Brussels sprouts gratin for a pop of unique flavor, or even cooked and pureed into a lovely sauce. Research some of the many unique ways these cool garlic cloves can be used! You’ll be amazed at what you find.
