As a base for a quick and satisfying salad, try grating the carrots and tossing with sweet golden raisins, peppery snipped chives, and a touch of Dijon mustard. The salad is tossed together with a touch of salt and pepper, and a drizzle of quality olive oil. Simple, healthy and delicious.

Grated Carrot & Golden Raisin Salad with Chives
Ingredients:
- 4 large carrots, grated
- 1/4 cup golden raisins
- 2 Tablespoons snipped chives
- salt and pepper
- olive oil
- 1 Tablespoon Dijon mustard
Directions:
- Toss the grated carrots together in a mixing bowl with the raisins, snipped chives and 1/2 teaspoon of salt and 1/4 teaspoon of pepper. Add in the mustard and 1 Tablespoon of oil; combine with a rubber spatula until the mustard is mixed in evenly. Serve chilled or at room temperature.
