Roasted Garlic & Za’atar White Bean Puree

White Bean Puree Za'taar

A simple white bean puree is a wonderful accompaniment to just about any protein you can think of.  Not only are they impressive and easy to make, but you can flavor them in a number of ways.  Try adding in fresh herbs from the garden, infused olive oils, or your favorite dried spice.  Here I have flavored a can of pureed cannellini beans with fresh thyme, a head of roasted garlic, a touch of chicken stock and a sprinkling of za’atar.  If you are unfamiliar with za’atar it is a rich Middle Eastern spice blend that includes sesame seed sand sumac.  Easily found in specialty food or spice stores, but if you search online you ca find a number of simple homemade recipes for za’atar as well.

Roasted Garlic & Za’atar White Bean Puree

Ingredients:

  • 2 cans white beans, drained and rinsed
  • salt and pepper
  • 1 Tablespoon fresh thyme leaves
  • 1/4 – 1/2 cup chicken stock
  • 1 head of roasted garlic
  • 1 Tablespoon olive oil
  • Za’atar, for sprinkling on top of the puree

Directions:

  1. Place the beans in the bowl of a food processor. Add in ½ teaspoon of salt, a big grinding of black pepper and the fresh thyme. Pulse until the beans are broken up. Add in the roasted garlic cloves and any oil that accumulated in the foil from roasting, along with the chicken stock and olive oil. Puree, adding in more stock if necessary, until smooth. Taste, and adjust seasonings if necessary.
  2. To warm, place the puree in a saucepan. Heat, stirring constantly, over medium-low heat for 5 minutes or until warmed through. Serve with a sprinkling of za’atar on top of the puree.
