We all know that ripe tomatoes and sweet, fresh basil are a great combo, but have you tried pairing tomatoes with fresh tarragon instead? I think it is a wonderful flavor profile to explore—the licorice tasting, slightly lemony tarragon along with the juicy tomatoes is mmmm…mmmm good. Try this combination on your next caprese salad or even on a BLT for an updated taste. For this tasty dinner, we decided to grill some salmon filets and top them with a simple relish of halved yellow and red cherry tomatoes, fresh tarragon, olive oil, a touch of red wine vinegar and for a tart ‘pop’ of tomatoey tastiness, julienned sun-dried tomatoes as well. A nice warm weather dish that really highlights the freshest produce from this season’s garden.

Grilled Salmon with Tomato-Tarragon Relish
Ingredients:
- 2 salmon filets
- salt and pepper
- Olive oil
- For the relish:
- 1/2 cup cherry tomatoes, halved (a colorful mixture of yellow and red tomatoes)
- 2 Tablespoons fresh tarragon, roughly chopped
- 2 Tablespons olive oil
- salt and pepper
- 2 Tablespoons red wine vinegar
- 1/4 cup julienned sun-dried tomatoes
Directions:
- Season each salmon with a pinch of salt and pepper. Heat your grill or grill pan to high heat; drizzle oil on each fish filet and grill, skin-side down first, for about 5 minutes per side, flipping once. (Cook the salmon until it is done to your likeness!)
- In the meantime, mix all of the relish ingredients together in small bowl. Allow it to sit for at least 20 minutes before serving, that way the flavors mix together well.
- Serve the grilled salmon with the room temperature relish.
