There are so many levels of flavor in this healthy sauté. First you gotta love that the chicken you use is easy-peasy shredded, store-bought rotisserie chicken; the shredded chicken is added to a sauté of beans, red onions and healthy collard greens–all of which is flavored with a nice vinaigrette made with tart apple cider vinaigrette, fresh thyme, fresh tarragon and olive oil. And the finishing touches you ask? Crispy bacon (yum) and a dash of hot sauce for a bit of a kick. I like serving this healthy saute over buttered pasta, but it would also be a wonderful filling for a whole wheat burrito, or even the base for a unique brunch idea when served with a fried egg.
