This recipe is why I adore Rozanne Gold’s fabulous cookbook entitled Radically Simple. Each and every recipe from her book are just that: radically simple. Take this recipe that uses gorgeous breakfast radishes; you start by roasting them until a bit tender along with olive oil and a sprinkling of salt and pepper. You then simply serve the roasted radishes alongside slices of Spanish Manchego cheese. This nutty cheddar cheese pairs beautifully with the radishes; I like serving this appetizer or small plate with a slice of black olive bread and a class of Spanish Rioja.

Roasted Breakfast Radishes with Manchego
Ingredients:
- Recipe based on one from Rozanne Gold’s Radically Simple cookbook*
- 1 bunch of breakfast radishes, greens trimmed as need be
- olive oil
- salt and pepper
- Manchego cheese, sliced
Directions:
- Preheat the oven to 400 degrees. Arrange the radishes on an oiled baking sheet. Drizzle with a touch more oil and a sprinkling of salt and pepper. Roast for 12-15 minutes or until slightly tender.
- Serve with slices of Spanish Manchego cheese, and bread if you prefer.
