Chipotle-Lime Pork Tenderloin

The marinade for this grilled pork tenderloin is a spicy combination of chipotle salsa, fresh lime juice, a touch of honey, garlic powder and fresh oregano.  The pork marinates for at least 30 minutes in the mixture before being grilled and then finished off in a hot oven along with more of the marinade and some white wine.  The marinade in the pan becomes a wonderful glaze and sauce for a tender and super flavorful pork dish.

Chipotle-Lime Pork Tenderloin

Ingredients:

  • (1) 1-1 1/2 lb. pork tenderloin (preferably organic)
  • (1) 8 oz. can store-bought chipotle salsa
  • juice of 2 large limes
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 teaspoon kosher salt
  • 2 sprigs fresh oregano
  • olive oil spray for the grill pan
  • 1/4 cup dry white wine
  • 2 limes, cut into quarters

Directions:

  1. Combine the chipotle salsa through the fresh oregano in a large re-sealable plastic bag. Add in the pork tenderloin, close the bag and refrigerate the pork for at least 30 minutes, up to 1 hour.
  2. Take the pork out of the fridge and allow it to rest at room temperature for 15 minutes.
  3. Spray a grill pan with olive oil spray. Remove the pork from the bag and grill, flipping once, over medium-high heat for 5 minutes per side. Meanwhile, preheat the oven to 375 degrees.
  4. Once the pork has been grilled on each side, place it in a baking pan (with raised sides) along with the remaining marinade poured on top. Also pour over the white wine.
  5. Bake for 25 minutes, or until the internal temp of the pork registers at 145 degrees. Allow the pork to rest for 5 minutes before slicing and serving with some of the sauce, along with the lime wedges on the side.
