This colorful salad is made with quite the array of bitter greens. Use whatever bitter greens you can find, but I used a nice mix of curly endive, radicchio, Belgian endive and escarole; the combination is nice because there are a few softer greens alongside crunchier greens, but they all have a slightly bitter flavor which I adore. Such a lovely flavor combination to pair these greens with sour grapefruit segments, creamy avocado slices and a homemade creamy poppy seed vinaigrette.
