Turnips are definitely an overlooked vegetable.  Slightly peppery yet creamy when pureed, they are a delightful root vegetable to roast, mash or even add into your favorite hearty, cold weather stew.  In this lovely recipe, they are sauteed along with a head of fennel, a diced sweet apple, and a touch of fresh rosemary.  White wine and vegetable broth are the two liquids used for the base of the soup, along with a cup of low-fat milk for a creamy texture and flavor.  Unique and smooth, this is a vegetarian soup that the whole family will adore.
