If you can get your paws on a bottle of pomegranate molasses, you should start by making this lovely and nutrient-rich main course salad. Pomegranate molasses is a syrupy reduction of pomegranate juice which we all know is packed with health benefits; because it is reduced the color is deeper and the flavor more concentrated. It is a great reduction to keep in the pantry as a glaze for seafood and meats, and like in this recipe, a lovely addition to a homemade vinaigrette.
The sea scallops are seared to perfection and the salad is a combination of peppery baby arugula, sliced fennel, pomegranate seeds and creamy sliced avocado. The vinaigrette is filled with a nice combination of flavors: ground fennel, ground ginger, olive oil, and the star of the show, the lovely pomegranate molasses. Decadent yet healthy, this salad is a winner!
