Although I changed the dish up a bit from its original version (in terms of how I cut the zucchini and with my addition of crumbled blue cheese), the taste and feeling of the dish are still the same. Hailing from Martha Stewart Living magazine, the idea behind this fresh salad is that you use zucchini as the base for a slaw, instead of cabbage. Along with crunchy celery, sweet apples, fresh basil and crunchy sunflower seeds this refreshing side dish would be lovely at your next poolside cookout.
