After a busy day I usually gravitate towards a simple yet delectable pasta dish like this one for a quick-and-easy dinner idea. Tender orecchiette pasta tossed with Italian sausage, mint, red onions and hearty chickpeas. The fresh mint pairs very well with the other ingredients and give a slightly sweet pop of flavor to the overall dish. A dollop of ricotta cheese and a sprinkling of Pecorino later, dinner is served in no time at all.
