‘Grilled Steak Skewers with Arugula Chimichurri’

If you have never made a homemade chimichurri, it is an Argentinian condiment that is most often paired with meat.  This version is made from peppery arugula, garlic, red wine vinegar, olive oil and a pinch of crushed red pepper flakes.  Slightly spicy this dipping sauce pairs perfectly with smoky grilled beef kabobs like these.  The beef is flavored with ground cumin and is cooked on skewers alongside red pepper slices, red onion and mushroom caps.  A lovely recipe to get your summer grilling season started!
