My Marinated Squash Salad with Feta & Olives is a no-cook, extremely flavorful side salad that uses some of the best of this season’s produce. Simply slice yellow squash a zucchini lengthwise with a vegetable peeler, marinate the squash for at least 30 minutes in a tangy mixture of vinegar, oil, salt and a touch of sugar and then toss the slightly briny salad with creamy feta cheese, a mixture of olives, buttery pine nuts and fresh herbs. A healthy side salad that that would work well at your next pot luck, grill out, or weeknight dinner with friends and family.

Marinated Squash Salad with Feta & Olives
Ingredients:
- 1 yellow squash, sliced lengthwise with a vegetable peeler
- 1 zucchini, sliced lengthwise with a vegetable peeler
- ½ cup apple cider vinegar
- 2 Tablespoons extra virgin olive oil
- Salt and pepper
- Pinch of granulated sugar
- Crumbled feta cheese
- ½ cup mixed olives
- 3 tablespoons pine nuts
- Handful of fresh herbs, chopped
Directions:
- Place the thinly sliced squash and zucchini in a bowl. Pour over the vinegar, oil, 1/2 teaspoon of salt , a grinding of pepper and the sugar. Toss together with tongs, cover and refrigerate for 30 minutes to 1 hour.
- Toss the salad with the cheese, olives, herbs and pine nuts. Serve either room temperature or chilled.
