If when you buy beets, you are not cooking their greens in addition to the lovely beets themselves, you are totally missing out.  Beet greens are very similar to Swiss chard, and similarly just need a quick sauté before enjoying.  I loved the idea of this salad—filled with cubes of tender beets, the greens, a nice vinaigrette, fresh dill and crunchy walnuts– this hearty side salad is gorgeous to look at and tasty from the first bite to the last.
